Nisitrol is a natural antimicrobial agent and used as a natural food preservative. The active ingredient is Nisin on a 50% salt base. Nisin is effective against wide range of Gram-positive bacteria particularly spore forming bacteria.
It inhibits certain strains of food pathogens, such as Clostridium botulinum, Bacillus subtilis, Bacillus stearothermophilus, Staphylococcus aureus and Listeria.

Methods of Application:
Nisin is applied in solution or as dry powder mixed into food during processing with heat. It is also applied in surface treatment by spray or immersion method or in packaging material. Nisin is most stable at pH 3.0 in solution.
Application of Nisin:
Nisin is used in many food products in the range of 3.0 to 8.0 pH.
